From eerie eyeballs to ghostly designs, these creative cupcakes are easy to make and can be customised with your favorite spooky decorations. In this blog post, I'll share a step-by-step recipe, along with photos of some spooktacular looking cupcakes. They’re as delicious as they are haunting.
Ingredients:
- 1 and 1/2 cups all-purpose flour
- 1 and 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs, at room temperature
- 2 teaspoons vanilla extract
- 1/2 cup milk, at room temperature
Instructions:
Preheat Oven and Prepare Muffin Pan: Preheat your oven to 350°F (175°C). Line a muffin pan with cupcake liners.
Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
Cream Butter and Sugar: In a large bowl, using a hand mixer or stand mixer fitted with a paddle attachment, beat the softened butter and sugar together on medium-high speed until light and fluffy, about 2-3 minutes.
Add Eggs and Vanilla: Add the eggs one at a time, beating well after each addition. Beat in the vanilla extract.
Combine Dry and Wet Ingredients: With the mixer on low speed, add half of the dry ingredients to the wet ingredients, followed by half of the milk. Mix until just combined. Repeat with the remaining dry ingredients and milk. Do not overmix; the batter should be smooth and thick.
Fill Cupcake Liners: Spoon the batter into the cupcake liners, filling each about 2/3 full.
Bake: Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Rotate the pan halfway through baking to ensure even baking.
Cool: Remove the cupcakes from the pan and transfer them to a wire rack to cool completely before frosting.
Frost (optional): Once cooled, you can frost the cupcakes with coloured frosting and then decorate them individually.
This recipe yields about 12 cupcakes. Adjust quantities accordingly if you need more or fewer cupcakes.
Cupcake idea 1: Cut up small pieces of licorice and create a pumpkin looking face.
Cupcake idea 2: Use a Halloween decoration such as this ghoulish finger and place on top of the cupcake. Add some rasberry Coulis or even jam will work. To make things even more interesting - add a plastic halloween toy such as an axe or a knife.
